Recipes and Snacks For My Picky Eater Kids

by Eden Godsoe posted to Food & Drink | 6,732 views

My kids (especially my 7 year old son) are pretty picky eaters. As a full-time working mom, I am not usually the one making their meals or sitting with them while they eat. I pulled together these recipes and snack ideas to share with our au pair & nanny as well as to try myself.

Breakfast: Fool-proof Crepes | Three Many Cooks

Tomorrow I’ll post about how I’m celebrating Valentine’s Day this year. Since it falls on a weeknight, I’m keeping it especially simple with a three-course crepe dinner. Sounds complicated, but it’s not. With one simple batter you can produce an impr...

Make the batter once and kids can add fruit or other fillings.

Breakfast: Homemade Oatmeal | A Beautiful Mess

Oatmeal is one of our absolute favorite autumn and winter treats! We thought it would be fun to experiment with different flavors and share our favorites with you. My favorite is the peanut butter + jelly flavor. It was incredible....

One recipe that can be transformed into nine different baked oatmeals. Perfect for breakfast or a snack. I think my kids will like the PB&J oatmeal!

Breakfast: Spinach Muffins | CrunchAColor

Healthy muffins that kids can help prepare and will love to eat. Sold!

Snack: No Bake, Sunbutter Bites | CrunchAColor

Whether it was because of the hint of honey, or the wholesome crunchiness of oats, this recipe resulted in a healthy treat that will become a regular feature on our lunchtime and afterschool snack menu.

Snack: Strawberry Smoothie | AllRecipes.com

Strawberries blended with milk, yogurt, sugar, vanilla and ice.

In the past we have bought pre-made yogurt drinks but I think it's healthier and reassuring to make a smoothie yourself. I wouldn't mind some too!

Snack: Cheerio Treats

Super easy. No bake and a great after-school snack.

Doesn't get much easier and much healthier than similar bars that I buy.

Snack: Roasted Spiced Chickpeas | Whole Living

I'm a fan of kale chips for adults or kids.

Turnkey Meal: Whole Grain Pancake Mix | Family Chef

Breakfast for dinner, really? Sure! Add a chicken sausage for protein, some fresh fruit and cut up veggies. What could be better? Just go easy on the syrup or try fresh whipped cream which has just a touch of sugar.

My kids (and my husband and me!) will love this.

Turnkey Meal: Pita Pizza | Miss Barb's Kitchen

Pizza is a favorite kids food. It's right up there with Mac and Cheese, Chicken Nuggets and French Fries. There is only one thing kids love more than eating pizza...and that's making it themselves.

My kids love pizza but I didn't want to keep giving them unhealthy, calorie-heavy pizza ordered from the nearby pizza joint. Pita pizza is not only healthier but your kids can participate in the creation and choose what to put on their pizza.

Turnkey Meal: Mac & Cheese | Eat, Drink, Smile

When I say this is THE Best Mac & Cheese I’ve ever put in my mouth, that is not an exaggeration. Ooey, gooey, cheesy, rich and decadent- it’s so wrong, yet so right. One bite of this dish a few weeks back at a dinner party was eye opening. Honestly...

Friends claim this recipe is the best mac & cheese ever.

Turnkey Meal: Guacamole Chicken Wraps | My Recipes

Lettuce leaves line the tortillas, keeping the wraps fresh. Because of the generous amount of lime juice, the guacamole doesn't discolor.

Funner to eat than sandwiches and you can cram some healthy things in there. My kids might not want the guacomole but I can imagine putting in cheese or something else.

Turnkey Meal: Turkey Sloppy Joes

If you're a fan of sloppy joes, you absolutely HAVE to try this recipe.

The perfect sloppy joe. Made with turkey instead of beef.

Protein: Crunchy Chicken Tenders | The Family Chef

A friend of mine recently asked for a recipe for some chicken tenders I had made. Talk about having no recollection! When she described it to me, she said it was breaded and either baked or pan fried and that I said it was a healthy version of chicke...

We usually go with frozen chicken tenders and I know those are not good. Plan to try these as a healthier option.

Protein: Italian Meatballs

This is the recipe my mother made for me when I was young. I sometimes serve them on a fork and call them "meatball lollipops" just like she used to.

Using oats instead of breadcrumbs boosts the nutrition. It's an easy dish that can be served plain or with pasta and sauce.

Protein: White Castle-like Sliders | Babble

White Castle-Like Sliders by Babble Top 50 Mom Food Blogger, Robin Sue, is a favorite family recipe. Make it for dinner or find more best recipes from other Top 50 Mom Food Blogs.

Both my children recently discovered they actually like beef...but not all beef. Sliders work well as they are less overwhelming than a steak or big burger.

Protein: Turkey Meatloaf | Food.com

This is usually one of the 2 meat loaves that I make. You can use Lipton onion soup mix or one of the other flavors that they make. Even good with ground turkey. Leftovers make great sandwiches

Love the idea of substituting ground turkey for beef.

Vege: Oven Baked Sweet Potato Fries | Food Network

These only take 5 minutes of prep time & then into the over for 20. So easy to do and loved by kids as well as adults. Fancy them up by putting them in a separate container.

Vege: Lemon Garlic Broccolette

Broccolette is similar to broccoli but with smaller florets and longer, thin stalks. It’s a cross between broccoli and Chinese kale, and is slightly sweeter than broccoli. I think it has notes of asparagus too, but don’t tell my kids.

My kids eat broccoli but don't love it. Who could blame them - plain broccoli is boring. Broccolette with some lemon garlic sounds much more appetizing.

Vege: Roasted Kale | Amy Andrews

Who would think that 10 minutes in the oven could turn dino kale into something even better than a potato chip? Seriously. Try it. Be careful not to overbake, it really goes quickly. I have no idea how long it will keep after roasting, because it...

Crispy, delicious...kale? Who knew? I know I will like it. We'll see what my kids think.

Alana Brooks: I hear kale chips are amazing! I'm not such a fan of kale itself, but I'm hoping the chip option will be tasty.

Krista: I LOVE Kale chips! I will tell you that they sell some amazing ones at the Ferry Building Farmer's Market in SF if you don't feel like cooking them yourself... :)

Looks a little labor intensive, but really just involves some chopping and simmering.
