I need some unique ideas for a baptismal gift for a godparent to give to the child.

Start a college fund for them. Money will grow over time, and it's a gift that signals that you're taking care of them.
If a girl, what about starting a charm bracelet -- the first charm could have the date of the baptism and the child's initials.
I love sterling silver gifts (rattle, teething ring, cup,or piggy bank) that can also be engraved with name and date of birth.
An engraved silver spoon is always nice and becomes a lovely spoon for jams...etc later.
mcdonalds stock - or stock in another company that the child has a lot of contact with. good way to teach value of $/investing. names in knit blankets - my girls LOVE theirs and will use them till they are in high school! us bonds (if child is us citizen)
Our daughter's godmother gave her a beautiful but simple silver necklace w/ a small cross on it. We are not very religious so I thought it was in good taste - the cross isn't overly ornate or anything. We also got some really nice hardcover books that were inscribed & that our children will keep forever.
Go to your local Catholic store (google it) and see what they have. For a girl you could get a necklace with a cross (tiffany's has a very nice one). For a boy you could get a keepsake box with a cross on it. Combine this with some "baby" religious books. You could also do a savings bond.
This is a tough one. All the religious gifts we've found are super tacky. Some things we've done include an engraved photo frame with the child's name and a cross (most engravers have a couple of cross symbols they can use, and it makes the gift at least vaguely religious); a gold cross necklace if it's a girl; or books. I did silver candlesticks with the date engraved on them. My brother and his wife baptized both of our children so I wanted it to be special and commemorative.
